Egg hoppers

 
I made this Srilankan food called Egg hoppers which are also known as Appa. It is an iconic food of Sri Lanka. It is really easy to make but you should plan ahead. Egg hoppers are thin pancakes with crispy edges made from rice flour, coconut milk, palm toddy and egg. Everyone loves to eat it; especially children; as it is very tasty. My favourite one is the one with eggs as it is simple and nice to eat. It is very easy to make. First, Combine the rice flour, toddy, sugar and coconut milk and leave it to rise for around 7 hours. Heat a hopper pan and pour about 3 tablespoons of batter into the pan, swirl the pan and crack an egg in the centre. And cook it for approximately 5 minutes and then serve it. It is a great breakfast to have as it is easy to make once the preparation is done. -   Harthika
